The evolution of coffee

Rhea brings at Sigep World its vision that moves beyond the traditional concept of coffee shop. The company presents some examples of the coffee evolution. “It is a journey through specialty coffee, artificial intelligence, automated solutions, and new languages of taste – the company explains – where technology and coffee culture converge in a contemporary, forward-looking story”. In particular, Barista On Demand, recently honored with the Good Design Award, blends design, technology, and user experience. It is an autonomous bar capable of interacting with users, transforming a traditional purchase into a personalized, on-demand service, delivered exactly where it is needed. Besides, the rhTT10 is a compact, high-performance machine equipped with an integrated milk system for beverages made with fresh or plant-based milk, including large cup formats and double dispensing.

TAP Pastry revamped both in design and technology

Also Tecnoinox presents the latest generation of its flagship product: TAP Pastry. This premium oven for professional pastry chefs has been completely revamped both in its design and technology. “TAP Pastry ovens – the company says – are the new frontier in professional cooking and baking: highly automated digital combi ovens that are easy to use, offer powerful humidity extraction for impeccable results, and 0-100% humidity control, thanks to the automatic Climafix function and the manual vent control function”.

Moretti Forni shows its “Vision”

Moretti Forni showcases its new technologies at Sigep World 2026. One of its innovations isVision, the artificial intelligence system that recognizes the product and automatically adjusts cooking, ensuring uniformity and reducing operator intervention on the serieT ovens.
In addition, the new serieT T65E is a high-productivity tunnel oven designed for “special” formats such as New York Style. “Compact and efficient – explains the company – it is ideal for chains and laboratories that require fast production and constant quality on large numbers”.

Kitchen equipment and machines: Italy fourth largest producer in the world

According to EFCEM data reported by Sigep, in 2024 global demand for professional kitchen equipment exceeded €100 billion, an 8% increase compared to 2023. The market has quadrupled in less than two decades, growing from just over 25 billion in 2005 to its current levels. Besides, global production is concentrated in four countries, which account for around 50% of the total: China, Germany, the United States, and Italy. Italy remains the world’s fourth-largest producer, boasting a high-profile reputation for its culinary tradition, technology, and innovation.
