In particular, the intelligence of professional ovens avails itself of innovative technologies and state-of-the-art algorithms to implement performances and sustainability. According to Mario Moretti, Managing Director of Moretti Forni, «The AnyChef Technology of the serieX oven exploits advanced algorithms to adapt automatically the cooking cycles to any product. Each phase of the preparation is optimized, from the choice of flour to the size, up to the degree of hydration, with graphic indications on the display that even suggest the best position where to bake. This assures uniform results while minimizing the operator’s intervention».

The versatility of serieX allows managing different cooking modalities (cooking, regeneration, pre-cooking and refining). They can be adapted to pizza, bread, pastry and gastronomy, with a «consumption reduction up to 45%».

Another product is the Core oven that is equipped with patented Condecktion system. It combines the precision of the static cooking with the optimization of heat flows, shortening service times by even 20%. The appliance is studied for the innovative Refining process. It allows user to pre-cook the products and finish cooking them just at the service time. Core «with an average consumption of 1.5 kW/h and a max. power of 4 kW, remarkably decreases the energy impact».

The SmartBaking App

Both ovens can be managed by means of the SmartBaking App. It allows controlling them from remote for the ignition, setting up of cooking parameters, timer programming and monitoring of consumptions. The intuitive interfaces make the devices accessible to both expert professionals and to less trained operators.

Constant improvement

The research course aims at constantly improving every operational aspect of the appliance use. «With Core – Mario Moretti says – the Refining process reduces wastes and optimizes the workflow through the two-stage cooking, suiting service rhythms, while the Condecktion technology ensures a uniform heat distribution, shortening cooking times and improving the efficiency. The inclusive AnyChef logic of serieX simplifies the operators’ work and improves the finished product quality due to autonomous and optimized cooking cycles. The possibility of filing workflows and of customizing each recipe parameter enables the precise management».
