The technological innovation in the field of the integrated reverse osmosis and the ozone use in washing phase optimize the operation of professional machines for the deep cleaning and sanitization of dishes, so decreasing the use of detergents and additives.

The sanitization of dishes, glasses and coffee cups and the knockdown of detergent and additive consumptions, in a professional dishwasher with compact sizes, which exploits the standard integration of systems for the ozone cleaning and the reverse osmosis in the various washing phases. This is the way of environmental sustainability and of improvement of dishwashers’ use performance undertaken by Uragan, with a range of products that includes under-counter dishwashers and hood-type dishwashers for industrial use. «Efficient performances are precisely guaranteed by the synergistic action of ozone and reverse osmosis – explains Giulio Cecchin, product manager of Uragan -. Innovative functions that we have successfully integrated inside appliances, at which we have worked to obtain high use results and a particular compactness of finished sizes».

Self-cleaning osmotic membrane
The reverse osmosis technology, positioned inside the machine volume, improves the purity qualities of the water used by the dishwasher while washing and rinsing, preserving the appliance itself against the damages caused by the accumulation of limescale and other residues, as well as against the excessive use of detergents and chemical products. «Through the reverse osmosis, any water coming from the water network is filtered, so obtaining a fully demineralized water, which grants a much longer service life of the machine and, also, a higher protection from the presence of bacterial loads and microorganisms that can develop under limescale encrustations. Besides, in terms of washing result, the osmotic water leaves no traces or streaks especially on the glass, reducing the use of rinse aid products». The process is based on essential components. The machine interior hosts a hydraulic filtering circuit: the water enters through the solenoid valve and is conveyed inside the osmotic membrane by an 8-bar pressure pump to carry out the mechanical filtering from salts and other residues. Once out, it feeds the washing tank and the rinse boiler. A significant aid to obtain these performances while keeping the machine sizes compact has been given by the supplier of the osmotic membrane, since «it has supplied a particularly compact membrane, consisting of a single cartridge instead of 3-4 filters as it usually happens. The membrane is wound in a single cylinder and this is the real innovation in terms of space, in the ambit of the whole hydraulic circuit inside the dishwasher». The process of integrated reverse osmosis by Uragan has also another characteristic. «The innovative function is the self-cleaning of the ‘consumable’ membrane: a proper system is activated whenever the osmotic membrane is used and it removes its salt residues, which are then disposed into the drain. This counter-cleaning allows executing a single annual maintenance of the membrane itself instead of on a quarterly basis, as it happens in more conventional systems».

Stop to odours
Compactness and integration inside appliances characterize also the two ozone generators, installed close to the washing tank and the water rinsing circuit, in order to grant the constant ozone supply during the whole treatment cycle of cutlery. Through an apt pump, generators extract the ozone from the oxygen contained in the air drawn from the work environment through an electric discharge. Once extracted, the ozone is channelled and used within the process, where it develops a deep sanitizing action. The ozone presence has needed particular attention to the choice of materials and components that can withstand the oxidizing action. «We have tried reducing the presence of brass components and we have chosen to use materials other than the rubbers of most common use for fittings and gaskets, like PVDF, Teflon and EPDM, in addition to AISI 304 stainless steel that we use for the bodywork, too».

The advantages of the ozone use in the cutlery cleaning are manifold. «Besides the sanitizing power, we speak of the strong power of removing smells from both treated dishes and from the appliance itself. The ozone preserves hygiene and freshness of the entire washing and rinsing environment, preventing the operator from turning to the use of lemons, essences or other chemical products, which might also affect the steel quality, to deodorise thoroughly the environments from the odours of fish, egg, mayonnaise or others deriving from the presence of organic residues».
